This is another recipe from Jamie Oliver’s Save with Jamie
book. I'm not really into egg dishes, but the sweet potato and spinach frittata
has made me think otherwise.
There was a near cooking disaster as in the recipe it says
to put the pan straight in the oven. I nearly did before my flatmate pointed
out that the handle would melt. Good point well made, so once in an oven proof
dish, everything went to plan.
The frittata tasted pretty good, and as recommended it
tasted nice cold as well. Anything with sweet potato is usually a hit for me.
